Pan-Fried Potatoes Recipe

Serves: 2-4
Ingredients
  • 1 chopped small onion
  • 4 sliced mushrooms, optional
  • 4-6 sliced potatoes
  • 2 tablespoons of butter, I use Earth Balance
  • Salt (or Bragg's soy seasoning) and pepper to taste
Instructions
  1. In a big pan, melt the butter on medium-high heat
  2. Add the onions and mushrooms if using
  3. Sauté for a minute or so
  4. Add the potatoes, stir well so the potatoes are all coated in butter
  5. Turn the heat down to low and cover the pan
  6. Set the timer to 5 minutes
  7. When the time is over, uncover and turn the potatoes
  8. Cover again and set the timer for another 5 minutes
  9. Repeat one more time
  10. Now, season the potatoes and cover last time for another 5 minutes.
  11. Uncover, taste, season some more if needed, and serve immediately.
