Sorrel Soup with Poached Eggs Recipe

Ingredients
  • 3 tablespoons butter
  • 1 onion chopped
  • 1 carrot chopped
  • 3-6 potatoes cubed
  • 1 bay leaf
  • 4 - 6 cup broth
  • 1 bunch sorrel leaves cut
  • 4 eggs
  • Salt and pepper to taste
Instructions
  1. Fry the onions and carrots in butter till browned
  2. Add broth
  3. Add bay leaf and salt
  4. Add potatoes and cook till potatoes are done (about 20 minutes)
  5. Season
  6. Add sorrel and cook for 2 minutes
  7. Add eggs and cook for 2-3 minutes
  8. Serve immediately
