This easy frozen strawberries recipe is just right for the season. It’s summer and hot outside, so besides eating strawberries fresh right from the plant, having them in breakfast, and meals, we want an easy way to preserve them for winter.
Strawberries can be frozen like any other berries, and here we share how. However, frozen and thawed strawberries will be mushy. They are great for blending or cooking.
Nevertheless, if you want some whole berries on top of your ice cream, yogurt, or waffles, this easy recipe is for you.
Fill the freezer as long as the berries last.
The easy frozen strawberries recipe
First, you separate the berries into those that look good and will be kept whole, and those that will be blended up. The amount is about half.
Now fill the whole berries into portion-sized containers. This step can also be done ahead of time. For example, if you have beautiful strawberries at the beginning of the season, small, not so attractive more to the end. Freeze the nice berries in containers and keep them frozen till you have enough to top them.
Wash the ‘to be blended’ berries and add 1/3 sugar to them. Mix and let rest for about two hours. The mixture will not be overly sweet, because remember this is only half of all the berries. If you like your dessert very sweet, add more, if you like it less sweet, or use a sugar alternative, you can do that too.
Blend the berries and sugar together in a blender or using an immersion blender.
Top the berries with the sweet strawberry sauce.
If you had frozen the berries beforehand, make sure not to let them thaw, just top and freeze again.
If you are using fresh berries, just top and freeze together.
Using the easy frozen strawberries
Before use, take the container with the frozen strawberries out of the freezer and let them thaw. Now they are ready to be used. The souce has a nice creamy texture with a deep berry color, and the berries stay somewhat firm.
