I am from Brazil, leaving in Calgary since 2005 (married a Canadian) and we bought a small house in SK (zone 3a or b) in 2020. I am learning gardening from scratch. My husband has another 3-4 years to retire before you live in SK for the prepping and growing season from Easter to December (we will keep a place in AB to be close to our kids). The house in SK came with a nice size garden on the ground that we hope to turn into raised beds when we can. I will take my time to read all your posts – and tips on greenhouses etc… I love sweet potatoes and would love to grow them. I know very little about preserving, canning and fermenting… but want to learn specially these days that everything seems to be going crazy and growing my own food seems the right thing to do. The problem is that we don’t live in SK full time so we are trying the best we can with Victoria Day long weekend (I’m here in SK right now) going back to Calgary tomorrow. Anyway, it’s been a bit hard to learn all this and I get very tired (and confused) watching videos and different tips. Now that I found your website I feel I can just stick around and not spend so much time researching from one website to the other. You seem to have everything that I need right now, right here. And you are like “a neighbour”. I find that very nice. Take care and thank you again.

I live on the South Coast of England . I get a veg box every week with organic vegetables . I am trying to preserve some of it and perhaps the carrot salsa would be good. I am very old now but still going good ! Delicious non toxic food is my aim for me and my partner ! Many thanks for your very helpful site and tips!

Love the canned cucumber lecho recipe
mine is quite runny, would prefer it a bit thicker, what would your opinion be to adjusting?
less vinegar and oil………….or more tomatoes…………more cucumbers

You can not adjust vinegar or produce in a canning recipe for safety reasons. You can use more meaty tomatoes, so the recipe is good as is. Or if you only have more juicy tomatoes, cook them down before adding the cucumbers.
