Are you familiar with using buckwheat flour? My grandmother used to make pancakes with it, but I would like to use it for making bread.
Do you have suggestions for how to substitute it for wheat or for use in other recipes. It’s a very healthy grain and I’d like to use it more.
Any help will be appreciated.

Yes, buckwheat is very healthy, however, the name buckwheat is misleading, buckwheat is actually related to rhubarb and sorrel, and has no gluten. You can use the flour as you would use gluten free flour. We like buckwheat in porridge.
